Melt Their Hearts This Valentine’s Day

Double Chocolate Biscotti

ingredients
1 box DOVE CHOCOLATE DISCOVERIES (DCD) Double Chocolate Chip Cookie Mix - unprepared,
½ cup flour,
1 stick butter - melted,
2 eggs,
1 teaspoon almond extract,
Zest of 1 Valencia orange (optional)

preparation
1. Preheat oven to 350 degrees. In an electric mixer, combine the cookie dry mix packet and the flour. Add the melted butter, eggs, almond extract and the zest, if desired. Mix until a dough is formed (if dough is too dry after mixing for a few minutes, add ¼ teaspoon water).
2. Blend in ½ of the chocolate chip packet from the Cookie Mix.
3. Split dough in half and form 2 logs (each approximately 6½" long x 3" wide); place each log on an 18" x 13" parchment-lined baking sheet.
4. Bake logs individually for about 35 to 40 minutes each. Remove from oven and cool biscotti slightly on the baking sheet for 10 minutes.
5. While still semi-warm, cut biscotti crosswise into ¾"-thick slices. Return slices to the baking sheet and bake for 5 to 6 minutes longer. Turn slices over and bake for 5 to 6 more minutes.
6. Remove biscotti from baking sheet and cool completely on a wire rack. Cut each in half, if desired. TIP: When making biscotti, melt the other half of the chocolate chips included in your Cookie Mix over a double boiler or at 20-second intervals in the microwave, and dip each biscotti into the melted chocolate. Gently shake off any excess and place coated biscotti on a baking sheet. Refrigerate until the chocolate is firm, about 30 minutes.
